I think Jimi Hendrix is the most influential because he is so readilly identifiable with using a Strat and inspired so many people to take up the guitar. Also because of his superb mixing of different styles from heavy rock/blues/soul etc.... Multi faceted player.
You would have to say Jimi was the most influential, so many greats of today & yesterday all list him as an influence
