What's the best settings for create an midi??
I suspect you're asking about the various parameters relating to each channel, like volume, pan, reverb, chorus, expression, velocity etc etc...
I don't think anyone will answer that. It depends on too many factors. It's like asking some expert what makes him skilful. Very difficult to say.
It's depends a lot on your sound equipment and your personal preferences.
The only thing I can say is that if you're looking for high quality sounds, you need to customise your MIDI to the sounds device. If you're using an XG device, why not use all the features of XG.
If you're aiming your MIDI file for general use by a whole range of sound devices, then stick to GM. I think GS is particularly for Roland devices.
